顾客就是上0帝，这是每一个餐饮人所熟知的道理，没有顾客就不会有与名誉。餐厅要如何与顾客建立关系，如何让顾客回头并树立争取赢得口碑呢?

让顾客感觉是受欢迎的

沃迪阿伦曾说，顾客光临生意就有80%的成功。在对客服务方面，80%的成功就是对光临的顾客像对待自己的客人一样。

一个顾客等了30秒钟或40秒钟，但常常会觉得已经等了3分钟或4分钟。当被忽视时，就会觉得时间很慢，即时问候会减少顾客因等待而带来的压力。友好的问候更能让顾客在陌生的环境中放松心理压力，从而使服务工作顺利开展。

所以，我们要求服务人员在顾客一进入店内就要提供即时的问候、交谈，并且要求声音响亮，让客人感觉到自己是被欢迎的。

厚待“回头客”更要善待“头回客”

消费者之于餐厅，既有可能是“头回客”，也有可能是“回头客”。要占领市场，必须招徕“头回客”;“回头客”都是以“头回客”开始的，没有“头回客”，也就等于没有“回头客”;但“头回客”不可以成为“回头客”。

真诚地赞扬

人人都喜欢听到别人真诚的赞美，花几秒钟对顾客说一些称赞的话，能地增加与顾客间相互的友好情谊。让自己养成赞美的习惯，会很快改变你的人缘关系。与顾客之间建立起一个和谐、愉快的服务与被服务的氛围。

利用“超常服务”满足客人需求

“超常服务”具有一定的灵活性和创造性。客人是“花钱买服务”的消费者，很渴望在餐厅里享受到自己的“心理需要”，这是一种“经济心理化”的表现。

从而由“单一服务”演变成“双重服务”，即不仅要以优质的“功能服务”，而且要以优质的“心理服务”去赢得客人的满意，而其中“心理服务”的重要性，将会日益增强。

怎样提供方便，而市场就在“方便”之中

“方便”是一个巨大的市场，只有这个市场才能开拓客源。在客人用餐时，注意客人的就餐动态，及时捕捉客人的身体语言，即客人的需求信息，敏锐地发现客人微小的动作，及时为客人提供服务，方便客人正常用餐。

人们都喜欢与熟悉的人交往

人们都喜欢与自己熟悉的人、熟悉的环境打交道，对陌生的人和环境有一种的疑虑。作为餐厅的员工，要设法使自己被别人所熟悉，使餐厅被人熟悉才好。

牢记客人的姓名，了解客人的忌讳，熟记客人的忌口与嗜好，特别是一些“头回客”，等客人再次到餐厅用餐时，熟悉的人与环境会让客人有一种亲切感，成为忠实于餐厅的“回头客”。

学会用眼神与顾客交谈

在无法大声说话的情况下，你可以用眼神来交流，告诉顾客有关你愿意为他服务的信息。但时间的合理安排非常重要。我们建议采用10秒钟规则。即使你在忙于招待另外一个人，也要在10秒钟内用眼神与顾客交流。

如用口头问候一样，你不必打断与顾客正在进行的服务。只是暂停一下和瞥一眼就能抓住新顾客，而大大减少顾客被冷落而引起的投诉与不满。

把客人“栓”住

耐心的服务可以感化客人，“赢”得客人的满意，使客人从“有意拒绝”变为“满意接受”。

“自尊心”是人的一根特别敏感的神经。一个人在别人以亲切热情的态度对待自己时，就会产生一种被尊重的感觉。因此，在服务工作中，必须强调“一视同仁”。

服务员与顾客之间的交往能否顺利进行，在很大程度上取决于服务员是否懂得去保护顾客的自尊心。

说“请”和“谢谢”

这看起来似乎过时，而且你会说一些顾客对你也不那么礼貌，但那不是他们的工作。要建立与顾客的密切关系和获取顾客的忠诚，“请”和“谢谢”是重要的词语，容易说并且值得我们重复。
